Tonights Dinner

“I embrace the quiet and calmness of the night”

Tonight I decided to make something different other than a polenta dish. I decided on couscous with roasted butternut squash and feta cheese, I also felt like having steak. It was going to be a quiet night, with just Ronnie, Anthony and myself for dinner.

Coucous and roasted butternut squash

  • 2 cups of pearl couscous
  • 1 small red onion, chopped
  • feta cheese
  • butternut squash peeled and cubed, I buy it already cubed
  • salt, pepper, garlic powder to taste
  • olive oil
  • garlic cloves, minced

Spread the squash and red onion onto a roasting pan, drizzle olive oil over the top season with the salt, pepper,and garlic powder. Mince 3 or 4 garlic cloves and put over squash. Roast for 25 minutes or until done. While that is roasting, prepare your couscous, according to the directions . Add the roasted squash to the couscous, mix together, top with the feta cheese and serve. I hope you enjoy this quick and easy dinner.

    My friend you always think of different things! I am thinking when you wake up daily you think “What am I going to make for dinner tonight” ?
    You always seem to come up with different meals .. that’s why all your family loves coming to your house, cause you are always making different meals .. You never make the same meals .
    it all sounds delicious ! But I would have to try that couscous never had it ..
