Quinoa With Mushrooms and Cherry Tomatoes

While eating dinner last night, Ronnie was already thinking about tonight’s dinner (things haven’t changed in 33 years). He suggested turkey burgers with quinoa. We went to Whole Foods market; they make the best turkey burgers with feta and spinach and we bought rainbow quinoa. I now had to think of a new way to make the quinoa. I decided to use mushrooms and tomatoes . I looked up a few recipes so I could get some ideas and this is what I came up with.

  • 1 cup of quinoa cooked.
  • 1 pint of whole mushrooms, cut in half
  • 1 pint of cherry tomatoes, cut in half
  • 3 garlic cloves, crushed
  • olive oil
  • balsamic vinegar
  • Seitenbacher vegetable broth and seasoning

I cook the quinoa in the ‘vegetable broth and seasoning’ with the water. While that is cooking I combine the mushrooms, tomatoes and crushed garlic and put in a baking pan I drizzle olive oil over it and bake on 350° for about 20 minutes or until tender. I then drizzle balsamic vinegar over it and bake for about 10 minutes more. I pour the mushroom mixture over the quinoa and mix it together. I serve this with the turkey burgers, a salad and my favorite corn on the cob.
