Cooking with Papa

“be the grandparent you want them to remember…”

Saturday night with the girls are always fun. Tonight Mia decided to make the dinner with her Papa. They discussed what they wanted to make, and they came up with a delicious shrimp and pasta recipe that Mia cooked while Ronnie guided her. She did an excellent job with cutting all the ingredients, seasoning and preparing the pasta; and for dessert she made brownies. Mia is so eager to learn and help with cooking. She just might turn out to be a better cook than me!

Mia’s pasta and shrimp

  • medium crown of broccoli
  • 1/2 container of cherry tomatoes
  • 5 garlic cloves, minced
  • handful of fresh parsley
  • 1 can of fired roasted tomatoes
  • 2 pounds of shrimp, cleaned
  • salt, pepper, garlic powder, to taste
  • 1 small onion, chopped
  • olive oil
  • 1 pound of quinoa pasta
  • 1 can of black olives, sliced
  • 1/2 cup of white wine
  • parmesan cheese (optional)

Mia chopped the garlic, onion, broccoli, black olives, and tomatoes while the oil was heating in pan. She sautéed the chopped ingredients in the pan with the white wine and fire roasted tomatoes. While that was cooking she put the water on for the pasta. Mia then helped clean the shrimp and added it to the vegetables with the parsley and cooked the shrimp until it turned pink. Mia put the cooked pasta in a dish and put the shrimp mixture over it, and added parmesan cheese. She did an amazing job cooking, It was delicious!
