Cooking with Nyla

Today, I get to do errands with Maliah. I need to go to the market to pick up a few things, then we have to pick Mia and Nyla up after school. While I am doing all of this I am deciding what to make for dinner. My good friend Deby is always giving me ideas, one of her recipes is sausage and peppers over cavatelli. So when we get home, Mia has to get ready for cheerleading and I have to start dinner. I start to make the recipe that Deby told me about, but it turns into my own creation with the help of Nyla. Nyla, like her sister Mia, is always eager to help me cook and bake. While I am cooking the sausage, Nyla is cutting the mushrooms and peppers. It’s so nice to have the chance to just talk while cooking. Even though she didn’t eat what she helped to make, they both enjoyed some chicken nuggets made with real vegetables . As always it was a night well spent with my granddaughters.

The recipe

  • 1 pounds of feta and spinach chicken sausage
  • 1 pound of spicy Italian chicken sausage
  • 1 container of mushrooms, cut
  • 1 red bell pepper
  • 1 yellow pepper
  • garlic gloves, minced
  • olive oil
  • 2 pounds of Cavatelli pasta
  • 4 (or more) squirts of 365 tomato paste in the tube
  • parmesan cheese, optional

While Nyla was cutting up the mushrooms with a butter knife, I cut and sautéed the sausage in a splash of olive oil, tomato paste and minced garlic. I added the peppers and mushrooms and cooked them while the pasta was cooking. I added the pasta to the sausage mixture and served with parmesan cheese. Nyla did a great job helping me, the dinner was delicious!
