Quinoa Pasta with shrimp, asparagus and cherry tomatoes

I was thinking about what I should make for dinner and decided on shrimp scampi. So I looked in my refrigerator and that was the end of shrimp scampi. You will see a lot of quinoa pasta in my recipes because everyone wants to eat healthy. I like my pasta, so on Sundays I make the real pasta. It took me a long time to find quinoa pasta that tastes good and I finally found a brand at Wholefoods that tastes good Andean Dream Quinoa Pasta.

  • one bunch of asparagus
  • pint of cherry tomatoes
  • seasoning to taste. salt, pepper, garlic powder
  • handful of parsley
  • olive oil
  • butter
  • 2 pound bag of shrimp
  • 1 pound of quinoa pasta
  • grated cheese
  • 3 gloves of garlic, minced
  • white wine

Saute minced garlic, olive oil, butter, white wine and seasoning with the asparagus. cut the cherry tomatoes in half and put in pan. cook on medium until tender . While that is cooking make the pasta, make sure you don’t overcook the pasta. throw in the chopped parsley and shrimp . I usually add a few scoops of the water from the boiling pasta to the pan to make the sauce a little thicker .
