A Quiet Saturday Night

Ronnie and I are very rarely alone on the weekends, which we don’t mind. Our granddaughters slept over on Friday night; we did dinner and ice cream with them. It is always hectic when the 3 of them sleep over, but it’s well worth every special moment. We had the usual Saturday errands to do and by nighttime we both decided we wanted to stay home for dinner. We had no idea what we were going to make, we ended up making this delicious easy pasta dish.

  • 1 pound of quinoa pasta
  • 1 can of olives, sliced
  • olive oil
  • garlic cloves, minced
  • 1 container of cherry tomatoes
  • salt, pepper, garlic powder to taste
  • crushed red pepper, to taste
  • handful of fresh parsley, chopped
  • handful of fresh basil, chopped
  • parmesan cheese (optional)

Saute the garlic and a few tablespoons of olive oil, add the rest of the ingredients and simmer for 15 to 20 minutes. Combine cooked pasta with tomato mixture, sprinkle cheese on top and serve. It is mouthwatering, enjoy!
