Blueberry Topping

“taste and feel the breath of summer”

For Anthony’s birthday I made him his favorite cheesecake, this year I decided to make a blueberry topping made with fresh blueberries. I also cut up fresh strawberries to go along with it. The fresh fruit was a big hit!

  • 2 tablespoons cornstarch
  • 1/2 cup of sugar
  • 2 cups of fresh blueberries
  • 1/2 cup of water
  • 1 teaspoon of the juice of a lemon

In a saucepan, whisk together the cornstarch and sugar until there are no cornstarch lumps. Add water, blueberries and lemon juice. Cook over medium heat, stirring frequently until thick. Remove from heat and cool.
