“it’s a good day to have a good day”
As I am doing all my errands this morning, I’m thinking about what we can have for dinner. It’s been so hot out this week that cooking is the last thing I want to think about. All I can say is thank heavens for air conditioning. I’ve decided on something light and easy.
One of my very fond memories of my grandmother “Mama” was when I would go to visit her. She would whip up the most delicious meals. Even if she wasn’t expecting me, I would get some great food. This was one of them. She would put whatever she had in her refrigerator together and make the BEST frittatas!
- 1 bunch of asparagus
- 2 tomatoes, I used tomatoes on the vine
- 10 eggs
- salt, pepper, garlic powder to taste
- 2 handfuls of fresh parsley
- 3 – 4 garlic cloves, minced
- olive oil
- parmesan cheese
Use a non stick pan and coat the bottom with oil and cooking spray. Sauté asparagus and tomatoes and add seasoning, minced garlic, and fresh parsley. While that is cooking, prepare the egg mixture. Add the eggs, seasoning, minced garlic, parmesan cheese, and fresh parsley. Beat the eggs and add to pan with the cooked asparagus and tomatoes.
Cook on medium low until the bottom and sides start cooking. When the bottom layer is cooked, flip over with a dish. This is how my grandmother taught me.
Continue cooking, you may have to flip it a few times to make sure it is cooked thoroughly.
You can add just about anything to the egg mixture, in the winter I usually make it with potatoes. This will be your “I don’t know what to make for dinner” recipe. Hope you enjoy it!
