“love is friendship that has caught on fire”
Every Valentine’s Day I would make my family a special dinner. Most of the food would be red. I always make the same roasted red pepper sauce over spaghetti and a red heart cake. This year I was sick, so I had to make it a week later. My sister Robyn and I found this recipe for roasted red pepper sauce so many years ago, and we have made it ever since. Throughout the years I’ve made it so many different ways, this is how I made it this year.
Roasted red pepper sauce
- 2 jars of Roasted Red Pepper strips, drained
- 1 cup of heavy whipping cream
- 1/2 to 1 cup of Wishbone Italian dressing or your favorite
- handful of fresh basil
- olive oil
- salt, pepper, garlic powder to taste
- Parmesan cheese
- 1 1/2 pounds of quinoa spaghetti
- 1/2 pound of raw shrimp
Blend all the ingredients together in a blender or food processor, set aside. Clean the shrimp and saute in olive oil and seasoning, prepare spaghetti according to package. Toss the pasta in the sauce, add the shrimp and serve with parmesan cheese. I hope you enjoy this easy recipe as much as we do.
