“My head says gym my heart says Irish nachos”
Where do I begin to describe Ronnie’s nachos??? These are the ultimate of all nachos, (I don’t even eat the regular nachos anymore). My husband and I (and the kids) discovered these at a local restaurant 14 years ago – and we have been going there ever since. We love them so much that we make them at home. Paul, my nephew from London, makes them but adds his own twist to them. So, when we are together, I insist that he makes us some. It’s definitely worth trying this recipe. I hope you love them as much as we do. Enjoy!
Ronnie’s Nachos
- 2 bags of Cape Cod potato chips
- 1 package of bacon
- 4 scallions, chopped
- 3 tomatoes, diced ( you can use your favorite kind)
- 2 packages of shredded white cheddar cheese
- 1/2 red onions, diced
- 1 can of black olives, sliced ( optional)
- sour cream for the dipping
- salsa (optional)


Broil bacon until it is crispy. While that is cooking, cut up the ingredients. Spray a baking sheet and put the chips on the bottom, then layer the scallions, cooked bacon, tomatoes, red onions, black olives and sprinkle the cheese evenly on the top. Bake on 350° for 15 to 20 minutes. Serve with the sour cream and salsa.
