“home is my happy place”
Since it was a long weekend, my granddaughters stayed over most of it. I remember when I was young, my sister and I would stay at our grandparents house as much as our parents would let us. We have the best memories, and we always seem to reminisce when we are together; that’s what I want to give my granddaughters. Nyla suggested that I make pasta carbonara for her papa, because he is recovering from an operation, she wants to make sure I take good care of him. Well, we both thought it was a good idea, even though I have never made it I decided to try. I looked through a bunch of recipes, this is what I came up with. I hope you like it.
pasta carbonara
- 1 pound of spaghetti
- 3 eggs
- 1/2 small onion, diced
- 5 garlic cloves, minced
- 1 to 2 cups of pasta water
- handful fresh parsley
- salt, pepper,garlic powder to taste
- 8 ounces of pancetta or bacon
- olive oil
- 1 cup of peas
- parmesan cheese
While the pasta is cooking, sauté the diced onion and minced garlic in olive oil, cook until onion is soft; add pancetta and cook on med low. Don’t cook the pasta all the way, reserve the pasta water. Toss the pasta into the pancetta mixture, whisk eggs, seasoning and cheese in a bowl, slowly add to pan while tossing the pasta quickly to prevent the egg from scrambling. Add the pasta water and the peas, tossing again to create a saucy consistency.
Nyla came up with a great idea, the pasta dish was delicious!
