Good Ole Fashion Pancakes with a Splash of Vanilla

The lazy days of summer are upon us, which means I get to spend more time with my granddaughters. Today Mia and I decided to make pancakes from scratch. They are so easy to make and you can be creative. You can add blueberries, chocolate chips, sprinkles; the options are endless. Mia decided on chocolate chips, I decided on the blueberries.

  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 egg
  • 1 1/4 cup milk
  • 2 tablespoons butter, melted (use more for greasing griddle)
  • 2 teaspoons vanilla

Combine dry ingredients in a bowl, set aside. In another bowl add egg, milk, and melted butter. Add the wet ingredients to the dry mix until moistened (if it is too thick you can add more milk). Melt butter in griddle on medium heat, scoop about 1/4 cup of batter into pan. Cook pancakes until bubbles form, flip over and continue cooking .

    They look delicious Mia ! Stephanie you need to buy purple measuring cups and spoons .. lol. Mia might be there Sunday morning for breakfast
