“Sundays are made to be spent by the pool”
My kids wanted something different for Sunday dinner, so I sent out a group text and they all decided that they wanted tacos and nachos. I was pretty excited because it was an easy dinner to make. I cut up all tomatoes, olives, lettuce, and scallions and put them in containers until we ate. I sauted shrimp in taco seasonings for the tacos and my daughter in law made the beef. I made pizza like I do most Sundays. Today I decided to make one with multigrain dough and one with white dough. The homemade guacamole was so delicious, and we can’t forget Ronnie’s nachos. The girls played in the pool and then after dinner we had a water ballon fight. Life doesn’t get better than this.
- 4 ripe avocados
- 1 tomato, diced. I used plum tomatoes, you can use your favorite
- 1/4 cup onion, minced. I used yellow, you could also use red onion
- handful of cilantro, chopped
- 2 1/2 tablespoons lime or lemon juice (I used lemon)
- 1/2 teaspoon salt or to taste
Cut avocado in half, remove the pit and scoop out add to bowl. Add the lemon juice and mash until creamy. Stir in tomatoes, onion, cilantro and salt. Wrap with plastic wrap put in refrigerator until you’re ready to eat.
