Mozzarella and cherry tomatoes

“Where there is food… there is love”

Summer, the best time of year for fresh vegetables. This recipe is a must have in the summer with the fresh tomatoes and fresh basil. It’s easy and delicious!

  • 2 – pints of cherry tomatoes, halved
  • handful of fresh basil
  • 2 – 8 oz. mozzarella balls, cut up into cubes
  • olive oil
  • seasoning to taste – salt, pepper, garlic powder
  • 3 gloves garlic, minced

Place tomatoes, basil, and seasoning in a large bowl with lid, drizzle olive oil over the tomatoes. I place in refrigerator until I’m ready to eat. I add the mozzarella right before I serve it.
