“a recipe has no soul; you must bring soul to the recipe”
One of my very favorite dishes is sausage and peppers. I will make them when I have a lot of company or during the week for my family. I have a lot of parties in the summer so my guests can always count on sausage and peppers.
Everyday I text my husband and son for ideas for dinner. My suggestion today was sausage and peppers, they both responded “with polenta” . So I had to rethink my traditional recipe and make it with polenta. Here is what I did.
- 2 packages of sausage, without casing
- 3 peppers, I use one of each – red, orange, and yellow – cut up
- 1 container of mushrooms
- seasoning to taste
- 3 garlic cloves, crushed
- tomato paste
- polenta
I usually mix all my ingredients together and put in a baking dish and bake on 350° for about an hour depending on your oven. You will definetly know when it is done. Since they wanted to put it over polenta I did it this way.
I sauté the sausage in a pan with the crushed garlic and seasoning. While that was cooking, I cut up the peppers and added them with the mushrooms to the pan. I use the 365 tube of tomato paste. I squeeze the tube about 3 times (you can do more or less). I covered and let cook for about 30 minutes or until done.
While that is cooking, I make the polenta . I serve the sausage and peppers mixture over the polenta. I have to say it came out amazing! I hope you enjoy it.
