Easy breakfast bites

“your mornings set the tone for the day”

I’ve been telling Ronnie for awhile that I was going to make vegetable egg bites for him so he wouldn’t have to worry about making breakfast for himself. I figured I’d make them on a Sunday night and freeze them and he would have them for the week. Well I finally made them, and I have to admit they weren’t because of Ronnie. My mom fell and got hurt since she lives alone we all want to make sure she eats, so I knew these would be perfect for breakfast or for just a snack. ( I did make some for Ronnie too).

  • 12 eggs
  • seasoning to taste
  • 3 cloves of garlic, crushed
  • handful of fresh parsley
  • any kind of grated cheese
  • your favorite vegetable – I used cherry tomatoes cut in half and 1 pepper
  • muffin pans

I cut the cherry tomatoes and pepper, sautéed them with the crushed garlic and seasoning in oil. While that was cooking I mixed the eggs with the seasoning and cheese. When the tomatoes and peppers are done, I let them cool down than put them in the egg mixture.

I greased the muffin pan and filled them 3/4 full . I baked them on 350° for 15 minutes. This recipe made 16 bites.
