“cooking with love provides food for the soul”
While I was looking, for a vegetable recipe I came across a Brussels Sprout Hash with sweet potatoes, bacon, and an egg on top. So I tried it and my family liked it but wasn’t crazy about the egg being on top of everything. Since than I changed it to just the sweet potatoes and bacon (we love bacon in this house). My daughter Aleksandra loves it with the brussels sprouts so when she eats over I will add them, other than that I make it with just the sweet potatoes and bacon.
- 2 sweet potatoes, peeled and cut into pieces
- 8 strips of bacon
- 2 – 3 garlic cloves, minced
- salt, pepper, and garlic powder to taste
- handful of fresh parsley
- olive oil

Cook bacon in oven on broil, while that’s cooking I cut up the sweet potatoes and put them in a baking dish. I add the seasoning, minced garlic and parsley and stir it all together. I cut up the cooked bacon and add it to the seasoned sweet potatoes , drizzle olive oil on top and bake at 350° for about 45 minutes or until it’s the consistency you like.
