Today was the day that I was going to start walking again. I haven’t walked since I broke my foot. I planned on meeting my friend Deby. We were going to shop a bit and then on to walking. Well, we ended up going for a cup of coffee and talking for a couple of hours; needless to say we didn’t walk. While we were having coffee we talked about what I should make for dinner, a conversation I have with myself most days. Deby suggested a broccoli dish with garlic and olive oil. Now I am thinking about all the things I can do with broccoli. After we left, I went to my favorite store, Aldi, to pick up a few things and to see if they had anything fun to buy. I love going there to see all the new stuff they put out. My mother thinks I’m obsessed with the store. I picked up a few things, went home and started to cook. This is what I came up with.

- 2 to 3 crowns of broccoli, chopped
- handful of fresh parsley, chopped
- garlic cloves, minced
- garlic powder, salt, pepper, to taste
- 1 can of black olives, minced
- olive oil
- 3 tablespoons of butter
- 2 to 3 tablespoons of red pepper spread, or to taste
- 1 pound of quinoa pasta, any kind
- parmesan cheese
Saute the olive oil, minced garlic, and seasoning over medium heat, add the broccoli, parsley, and olives and cook for a few minutes. Add the butter and red pepper spread, cook until the broccoli is tender. Serve over pasta with parmesan cheese. Enjoy!





Well you had the right suggestion about walking , but I said I think it’s windy but I’ll go .. We shopped in tj max came out and both decided it was windy !
Went into Starbucks Stephanie gets coffee , and they had no chai 😥
So like you said we talked about supper and glad you took my word to make broccoli and macaroni with black olives ..
Cause you said Ronnie loves broccoli and I said make it then !
