Shrimp Scampi with a Twist

Since Isaiah is between sports, I don’t have to pick up the girls, and only have Maliah on Thursdays. So, I started going through one room at a time, because before you know it I will be back to my normal schedule with the girls. While organizing, I am thinking of what I should make for dinner; the same question I say to myself most days. It’s been a very low key week, so whatever I end up making I want it to be quick and easy. Ronnie and I both love shrimp scampi and I always seem to make it the same way. So, today I decided to make it a little different, and make it with my dads “secret” ingredient that he uses for is clam sauce.

  • olive oil
  • 3 garlic cloves, minced
  • handful of parsley, chopped
  • 2 tablespoons of butter
  • splash of white wine, I used riesling
  • 1 can of Pastene white clam sauce (my dads “secret ” ingredients)
  • 1 pound of shrimp, cleaned
  • 1 can of black olives, chopped
  • 1 pound of quinoa spaghetti
  • salt, pepper, garlic powder, to taste
  • parmesan cheese

Saute the olive oil, butter, garlic, splash of wine and seasoning, cook for a few seconds. Add olives, parsley, and can of white clam sauce, let simmer. Cook the spaghetti according to package, add a few scoops of water from the pasta to the mixture and then add shrimp. Add the pasta and serve with parmesan cheese.

    Oh Stephanie I’m so happy that you took my advice to start to clean one room at a time and get rid of stuff yay !!
    This meal looks so delicious and I’m sure it was ! Everything you make always looks so delicious!I love shrimp like you too ! Just think for 7 days you don’t need to think about supper …
