“you are what you eat”
My daughter Logan decided that she wanted to be a vegetarian. I don’t eat a lot of meat so I didn’t think it would be too difficult, well it is. I have to come up with different recipes, and the rest of my family likes good old fashion meat. Now that I’m making two meals instead of one, I always seem to give myself (or should I say my kids ) more work.
I met a girl at work who is a vegetarian, and she suggested stuffed peppers with lentils instead of meat. I never had the chance to get my dad’s stuffed pepper recipe , so I never made them. I liked the idea, so I started to experiment, and the results were delicious . My daughter Logan and my daughter in law love them this way. Now when I make lentils, I always make a lot so I can make stuffed peppers for another night. Refer to the lentils recipe.
