“this is my happy place”
While we were in Florida, all I could think of is if I prepared enough for what was going to happen with the Pandemic. I drove my son Anthony, crazy making sure we had everything we needed just in case places started to close down. I hated to leave Logan, but needed to get home. This is going to be a very difficult time for everyone. We need to be creative in what we do daily. I will try to post as many recipes and fun stuff that we do while being home. I started the morning walking my dog Remy, along my son Anthony; Anthony is working from home, and during his lunch break, we take a walk. When I went to the market, it wasn’t as bad as I thought it was going to be. For dinner, I made a shrimp dish over rice with a lot of vegetables. After dinner, Anthony and I started a puzzle, a very hard one. The day was very quiet, but I think that this is definitely the time to sit back and appreciate everything that you have.
Shrimp and vegetables over rice
- a couple of splashes of olive oil
- garlic cloves, minced
- handful of parsley
- 2 pounds of shrimp, devined
- 1 bag of frozen broccoli
- 1/2 bag of frozen peas
- half of pint of cherry tomatoes, sliced
- 2 cups of rice
- parmesan cheese, optional
- hot sauce, optional (Ronnie and my kids put hot sauce on everything)
Saute garlic, oil, and butter. Add broccoli, peas, and tomatoes and cook a few minutes. While that is cooking, make rice. Add shrimp and cook on low until the rice is done. Scoop vegetables over the rice, sprinkle cheese on top and serve. Enjoy this very easy recipe.
