When Ronnie and Anthony decided to do a sugar free challenge for 2 weeks, I thought it sounded reasonable. I was so very wrong, everything has sugar in it! I was excited to find out that polenta doesn’t have sugar in it, and that’s what I’ve been making ever since.
My family loves shepherds pie with meat, potatoes, and vegetables. I am not a big fan of the potatoes, so I decided to substitute potatoes with polenta, and meat with sausage. I buy feta and chicken sausage from Whole foods; It is delicious! I hope you like this version.
- Polenta- follow directions on back. I use 4 cups of water and 2 cups of heavy whipping cream for this recipe.
- 8 pieces of chicken sausage, without casing
- 1/2 bag of mixed frozen vegetables (or your favorite kind)
Make the polenta and while that is cooking, saute the sausage in a few drops of olive oil.
Pour the sausage into a large baking pan and spread it out evenly onto bottom of pan. Next, spread a layer of frozen vegetables on top of sausage. Spoon the polenta evenly over top, add 8 small pieces of butter on top of polenta.
bake on 350° for 45 minutes or until top is golden brown.




Well it sounds like another delicious. Meal at the Pirolli house !
