“the kitchen is the heart of the home”
Tonight we decided to stay home for dinner. We usually go out on the weekends, but it’s been such a beautiful weekend that we just wanted to stay close to home and enjoy our backyard. As you know, Ronnie always has ideas for dinner; so for tonight it is chicken and vegetables with rice for the side dish.
- 2 – zucchinis, cut into cubes
- 2 – summer squash, cut into cubes
- 1 – yam, cut into cubes
- 1 packet of lipton onion mix
- olive oil
- 2 pounds of boneless chicken thighs or breasts
- bag of string beans, cut up
First, cut up the zucchini, squash, and yam and put in baking dish. Then drizzle olive oil all over and sprinkle half of the onion mix over it. Next, cut chicken in cubes, put in bowl, add the other half of the onion mix and 2 more tablespoons of olive oil and mix well.
Put the chicken on top of the vegetables and bake on 350° for 1 hour or until chicken is done. Serve with rice or your favorite side dish. Enjoy!
