Not My Dad’s Meatballs

Memories of my dad cooking are the sweetest. He worked all week so on weekends he would cook the most delicious meals. One of my favorites were his meatballs, I would watch him make them but being an Italian he didn’t measure anything. So when I started cooking I would just throw things together and hope for the best. Throughout the years, I’ve been trying to make them taste like his, the one thing he did that I don’t do is fry them in a black cast iron pan, so will they ever taste exactly like his? Probably not, but they are close. He would make a bunch for the “gravy”, and leave some out so we could have them before dinner.

  • 3 pounds of hamburg meat – you can use pork, veal, and beef or just beef.
  • 3 eggs
  • 1/4 cup of grated cheese, more if you like
  • 1/4 of bread crumbs , more or less depending on how you like the texture
  • handful of fresh parsley
  • salt and pepper to taste
  • garlic powder to taste
  • 3 cloves of garlic, minced more if you like

Mix all ingredients together. Form into balls place on a sprayed cookie sheet or broiling pan and broil on low, while they are cooking I start my sauce. I finish cooking the meatballs in the sauce. My daughter in law likes them without the sauce, so I keep a few in the oven and cook them thoroughly. My dad’s memory is always with me while making these.
