Turkey Stuffed Peppers

Today was one of those days – I didn’t know what to make for dinner. My daughter mentioned that she was making stuffed peppers on Thursday, so I thought I would do the same for tonight.  I don’t think that I ever made stuffed peppers with meat, I always make them with lentils.  My Dad used to make the most delicious stuffed peppers (with meat), but I never got his recipe. I never wanted to make peppers with meat because they would never be as good as my Dad’s stuffed peppers. This is what I came up with. Enjoy.

  • 2 pounds of turkey meat
  • 6 peppers
  • 14 small sweet peppers (or you can use more large peppers)
  • salt, pepper, garlic powder, to taste
  • handful of fresh parsley
  • 1 can of olives, sliced
  • parmesan cheese, to taste
  • 5 garlic cloves, minced
  • 1 cup of rice, cooked
  • handful of mushrooms

Preheat oven to 350° Prepare rice according to instructions. In a large bowl, mix together turkey meat, salt pepper, garlic powder, fresh garlic, mushrooms, and olives. Transfer meat into a skillet pan, cook for a few minutes, add cooked rice, parsley and cheese, simmer for another 5 minutes. Spoon turkey mixture into cut peppers and place in a baking dish. I usually put a layer of water on the bottom of pan before I cook the peppers. Bake until peppers are tender around 30 minutes, depending on your oven.
