“let’s eat”
So for dinner I decided to make a shrimp dish with Quinoa. As I was preparing the quinoa, I looked in the freezer to make sure I had shrimp and realized that I didn’t have any. I decided to start cooking at 5 o’clock thinking the shrimp and quinoa wouldn’t take long to make, well frozen chicken does and that’s all I had in the freezer. So I made a few adjustments and come up with chicken cacciatore with quinoa.
I’ve never made chicken cacciatore before, so I looked up a bunch of recipes to get ideas. This is what I came up with. It ended up coming out really good.
- chicken thighs, bone in
- seasoning – salt, pepper, garlic powder to taste
- 3 cloves garlic, minced
- handful of fresh parsley
- 1 -28 oz can of crushed tomatoes
Since the chicken was frozen I had to defrost it by sautéing it for a bit. I added the garlic , seasoning, and parsley, than I poured the crushed tomatoes over the chicken and put it in a baking pan. I baked it in the oven on 350° for about 45 minutes or until it’s done.
