“home is my happy place”

It’s always a nice feeling to come home after you go away. I love to travel but I enjoy being home. The first thing I think about when I get home is what I’m going to make for dinner, so I sent my daily text; to my surprise it wasn’t polenta and sausage, Yay! While I was away, Ronnie and Anthony made a fish dish with vegetables, so that is their request. Now I had to figure out how to make it. I bought Cod and cut up a bunch of vegetables, added shrimp to it and a baked sweet potato. I seasoned it and Ronnie cooked it on the grill wrapped in foil. It turned out to be a nice and light dinner. I hope you enjoy it!

Grilled fish and vegetables

  • 2 pounds of Cod fish
  • 2 pounds of shrimp, peeled
  • 1 large summer squash, diced
  • 1 yellow pepper, diced
  • 2 vine tomatoes, diced
  • 1/2 container of mushrooms, diced
  • sesame oil to taste
  • salt, pepper, garlic powder to taste
  • chili lime powder to taste
  • garlic cloves, minced
  • handful of fresh parsley
  • 3 baked sweet potatoes

Wrap sweet potatoes in foil and bake until soft about 45 minutes to an hour. While they are baking cut up all the vegetables and set aside. Rub the oil and all the seasoning onto the cod, place on tin foil add the shrimp and vegetables on top of fish, fold the tin foil to create a tent. Grill for about 1/2 hour or until done.

    Minus peppers and tomatoes (and sesame oil), this make a great AIP (autoimmune protocol) meal!
