Mama’s Sponge Cake

“live – love – bake”

Another memory of my Mama was her sponge cake, she would make this when unexpected company would visit. She always amazed me, she would say she would rather clean her house than cook or bake. Mama definitely missed her calling, because everything she made was delicious. I would sit with her and measure the ingredients as she baked, it was difficult and not that accurate but after tweaking it for quite some time, the taste is finally like hers. My sister and I were so fortunate to have great memories of my grandparents; I hope I give my grandchildren the same kind of memories.

  • 4 large eggs, room temp
  • 2/3 cup sugar
  • 1/4 salt
  • 1 teaspoon vanilla
  • juice of a fresh lemon
  • 1 cup cake flour

Preheat oven to 325. Butter and flour pan.

Beat the eggs in a electric mixer, gradually add sugar and continue to beating until the batter begins to swell. Add the salt, vanilla, and juice of lemon and beat until forms a heavy ribbon.

Sift the flour into the batter and fold in completely. Pour into prepared pan. I used an oblong pan, and baked for 25 minutes. If using a round 9″ pan bake for 40 minutes.

I made 2 and put cool whip and fruit in the middle.
